Easy & Delicious Iced Thin Mint Mocha

Do you love Thin Mint Girl Scout Cookies? This iced mocha tastes so similar to the coffee version of that cookie, and I even sprinkled one of the cookies on top. 

It’s seriously so easy, with just one sauce, and a few more ingredients. So, if you love mint chocolate, mint mochas, or Thin Mint cookies, get ready for your new favorite drink. 

Thin Mint Mocha: Ingredients

I used the same sauce in both the coffee and the cold foam, for a doubly chocolate mint drink that was divine. You could mix this up if you wanted a lighter flavor, by using a peppermint cold foam or a vanilla cold foam. Up to you. And if you don’t want to pick up this sauce, or it’s out of stock, you can recreate it using the amounts below. 

  • Nepresso Coffee Pod: I had this Starbucks coffee pod, so that’s what I brewed with my Nespresso Vertuo machine. I brewed it right on top of the sauce so the heat would melt it and combine them. You can also use two espresso shots and 1/2 cup of milk (or water), or cold brew. I use a cup of cold brew in the video below. 
  • Mint Dark Chocolate Sauce: This delicious sauce is so good. I used about 2 tbsp. of it, which is standard for me in terms of flavoring added to coffee. It’s going to blend easier with hot coffee or espresso, but you can mix it with cold brew, especially if you have a handheld frother.   • Alternate Syrup/Sauce: If you don’t want to use that sauce, use a combination of chocolate sauce and peppermint syrup. I would do something like 2 tbsp. chocolate sauce to 1 tbsp. peppermint. 
  • Half ‘n Half: I put a little splash of half ‘n half in the brewed coffee. Half ‘n half makes coffees so creamy. Dutch bros uses half ‘n half in lieu of milk in their drinks unless you request otherwise. 
  • Heavy Cream: To make the cold foam, you’ll need some heavy cream. I know Starbucks has created a dairy free version of cold foam, but I haven’t perfected one yet.
  • Ice: You’ll need one cup of ice. I always mention ice, because how many times have you started a recipe that needs ice only to realize after that you’re out? Maybe it’s just me. I always check for ice first. 
  • Toppings: I crushed up a single Thin Mint cookie on top. Highly recommend. Chocolate drizzle would also be good!

Tools: 

For the cold foam, I always use my handheld frother. It’s super fast and even looks nice sitting on the counter. Big fan.

Step By Step Directions: 

  1. Add 2 tbsp. dark chocolate mint sauce to glass
  2. Brew two shots of espresso on top and stir to combine, or add one cup of cold brew coffee
  3. Add one cup of ice
  4. Add 3/4 cup milk if using espresso shots, add cream to taste if using cold brew. I like a splash. 
  5. In a separate glass, add 4 tbsp. heavy cream, 2 tbsp. milk, 1 tbsp. mint chocolate syrup and froth to soft set
  6. Add over coffee
  7. Crush up a Thin Mint cookie and put on top
  8. Enjoy!
